Matthias Hoffmann

Matthias Hoffmann holds a degree in Mechanical Engineering and has extensive international leadership experience, with in-depth knowledge of optimising global production processes, lean operations, and quality management. He joined BAADER as Chief Technology Officer in January 2025 and, since January 2026, has also assumed the role of Head of the Digitalization Division.

David McMahon

David has over 30 years’ experience working with Irish Technology companies. He holds a Business degree from Trinity College Dublin, as well as an M.Sc in Information Systems from the London School of Economics. David originally worked for five years as an Information Systems Consultant with AHC Systems , an IT Consultancy company owned at the time by Emydex’s present Chairman, Tony Connolly. After a year working as a Strategic Projects Manager with Vodafone Ireland, David went on to work for eight years as General Manager of Labyrinth Ltd, Ireland’s leading web development agency at the time, later acquired by BT

David joined Emydex Technology in 2009. He took over as Emydex CEO in 2010, when Emydex co-founder Redmond Burke retired. Since then David has overseen Emydex growth in company headcount to over 40 people, revenue growth of over 500% as well as the company’s entry into new global markets including Africa, Australasia and North America.

James Grennan

James has over 20 years’ experience in designing and implementing software solutions for food processing companies in Ireland and the UK. He holds an Electronic Engineering degree from Trinity College Dublin, where he specialised in Process Control Engineering as well as Computer Science.

James joined Scanvaegt Ireland (now Marel) in 1993 where he worked as a software engineer and systems architect for over 7 years, designing and implementing software systems for food processing companies. He later worked with Case New Holland (CNH) for 4 years as the lead software developer on an Advanced Production Scheduling system. Spotting a gap in the marketplace, James with Redmond Burke established Emydex in 2004, building a brand new software platform specifically designed for the meat, fish and food processing industries.

As Emydex Technical Director, James Grennan has technical oversight over a large team of experienced software developers, the bulk of whom have over 10 year’s relevant software programming experience in the Food Processing industry.

Working closely with our customers, they map existing processes, capture system requirements, and identify opportunities to optimise workflows using Emydex technology. Their deep understanding of both industry operations and our software platform ensures every solution is practical, scalable, and aligned with customer goals.

Shane Hayes

Shane Hayes is General Manager for Australasia at Emydex, leading regional operations across Australia and New Zealand and supporting customers in the successful delivery and optimisation of Emydex MES solutions. With over a decade of hands‑on experience in the meat industry, he specialises in bridging manufacturing operations and modern technology to drive efficiency, traceability and compliance.

Shane joined Emydex in 2018, starting as a Business Analyst before progressing to Product Manager, where he helped bring structure and clarity to product development. His background spans production management, planning, IT systems and MES deployments across Australia, New Zealand, Europe and North America.

Business Analyst / Project Manager

Robert Tobin

Robert Tobin is Business Analyst and Project Manager at Emydex, supporting customers in Ireland.

He joined Emydex in 2025 and has a long-standing relationship with Emydex systems, having worked with them at Slaney Meats for eight years. He also brings over 24 years of experience as IT Manager at ABP Slaney, alongside running his own IT consulting company for over 15 years.

During this time, Robert developed software and traceability systems for the food and transport industries and project managed the installation of an Emydex kill line. His deep familiarity with Emydex systems enables him to support customers in implementing effective, industry-focused solutions.

Business Analyst

Ladislav Ondrejicka

Ladislav Ondrejicka is Business Analyst at Emydex, supporting customers across Ireland and Slovakia.

He joined Emydex in 2023 and brings hands-on experience in the meat processing industry. He began his career on the factory floor at Dunbia in the UK, where he progressed from boning hall meat trimmer to IT Project Manager.

During this time, he also supported the rollout of Emydex across multiple plants. With experience spanning both production and project management, Ladislav has a strong understanding of factory operations and the challenges faced by processors.

Business Analyst

Jayne McMillan

Jayne McMillan is Business Analyst at Emydex, supporting customers in New Zealand.

She joined Emydex in 2024 and brings nearly 30 years of experience with Alliance Group Ltd, where she held roles including Laboratory Manager, MES Project Manager and ERP Consultant.

Jayne has developed strong expertise across operations, quality control and business management within the meat processing industry. In addition, she owns and operates a butchery business in New Zealand, giving her practical insight into both large-scale processing and retail butchery.

Tom Tully

Tom Tully is Regional Distributor at Emydex, supporting the protein food processing industry with extensive experience across operations, financial analysis and Manufacturing Execution Systems.

He brings over 38 years of experience in the protein food processing sector, with strong functional expertise across key areas of the business.

Lorna Daly

Lorna Daly is Head of Project Management Office at Emydex, leading multiple programming teams responsible for the implementation of the company’s core platform and modules across customer projects.

Her teams work closely with customers to configure Emydex in line with specific business practices, including integrating with financial and ERP systems, factory floor hardware, and external systems such as suppliers, customers and third-party government web services.

Lorna joined Emydex in 2011. She brings over five years of previous experience in computer services, including her time at IBM, and holds a BSc in Business Computing from Athlone IT.

Jennifer Tilly

Jennifer Tilly is Project Manager for Australia at Emydex, responsible for planning, coordinating and delivering food processing projects from start to finish.

Her key responsibilities include managing timelines and budgets, allocating resources, communicating with clients and technical teams, and ensuring the highest standards of service. She also monitors project progress, manages risks and implements improvements to support successful project delivery.

Jennifer joined Emydex in 2024 and has since been involved in the delivery of industry-focused projects.

Felsi Judith Lawrence

Felsi Judith Lawrence is a Project Manager at Emydex New Zealand, supporting customers across both the North and South Islands. She works closely with customers, industry specialists and technical teams to deliver Manufacturing Execution System (MES) solutions tailored to the needs of major meat processors across New Zealand.

With a strong background in IT project delivery and customer support, Felsi brings a collaborative and hands-on approach to managing complex projects, improving operational efficiency and enhancing traceability within processing environments.

Felsi joined Emydex New Zealand in 2023 and is focused on building strong customer partnerships and delivering reliable, long-term outcomes through Emydex technology solutions.

Christi Du Pisanie is Project Manager at Emydex, supporting customers across Ireland, Europe, the UK and Africa. She works closely with customers to implement new functionality and drive improvements that enhance the performance of their Emydex systems.

Christi joined Emydex in 2025, bringing a background in software solution implementation, with experience in systems integration, customer support and project leadership.

With experience across a range of industries and HR functions, Hazel brings a practical and people-focused approach to building strong teams and supporting a positive workplace culture.

Hazel joined Emydex in 2022.

Urszula Stawicka

Urszula Stawicka (known as Ula) is Office Manager at Emydex, supporting the day-to-day running of the business through coordination, internal communications, accounts support and office management.

She works closely with teams across Ireland and Emydex’s international locations, assisting with visits, events and general business logistics.

Ula joined Emydex in 2021 and brings a practical and well-organised approach to her role. She is known for her attention to detail, reliability and clear, professional communication.

Merlin Mary Joy is Global Application Support Manager at Emydex, based in Dublin.

She joined Emydex in 2019 as an Application Support Engineer and has progressed into a global leadership role within the support function.

With a strong technical background, Merlin has developed her expertise across application support and team leadership, playing a key role in ensuring consistent, high-quality support for Emydex customers worldwide.

Alan Doocey

Alan Doocey is Helpdesk Support Technician and Implementation Software Engineer at Emydex, supporting customers across Australasia.

He joined Emydex in 2018 and brings over 30 years of experience in the food processing industry. His career began at Dawn Pork & Bacon in Ireland, where he spent over 26 years specialising in factory floor software systems and gaining deep insight into plant operations.

Alan later expanded his experience in Australia with Southern Meats, working across logistics and supply chain operations. Having also worked with Emydex systems as an early customer, he brings a strong understanding of both operational and technical requirements.

With a background spanning production environments and software implementation, Alan plays a key role in delivering practical, industry-focused solutions that support efficiency, traceability and performance.

Luis Mendez

Luis Méndez López joined the Emydex Support Team as a Software Development Intern. Originally from Ribadeo in Spain, Luis has been living in Ireland since 2006.

He has previous support experience at HP and Ocuco, along with development and project management experience.

Luis holds a degree in Computer Science and a Masters in Project Management in Spain.

He is currently completing a Higher Diploma in Software Development at Dublin Business School.

Carne de Vreede supports Emydex customers across Australasia, working across support, testing and implementation.

He joined Emydex in 2021 and brings over 10 years of experience in the meat processing industry. He began his career on the factory floor, working across a range of roles including packing, labelling and trimming, before moving into office-based positions focused on data analysis and system support.

Carne has been closely involved in major project deliveries, including the rollout of Emydex across multiple beef processing plants for Silver Fern Farms. His hands-on industry background enables him to clearly understand customer requirements and provide practical, effective support.

Inesh Shanaka

Inesh Shanaka is Application Support Technician at Emydex, supporting customers in the implementation, maintenance and optimisation of Emydex solutions.

He works closely with clients to resolve technical issues, ensure system reliability and enhance performance across their operational environments.

Inesh joined Emydex in 2022 and brings a strong background in IT support and software development, with experience in application support, systems troubleshooting, customer service and system integration.

Joshua joined Emydex in 2023 and, following the completion of his studies, progressed into a full-time role in 2025.
